Meat Sauce: 500gm mince meat – beef, pork, chicken 2x 440gm tins of crushed or diced tomatoes 1x 440gm tin of beans 2 large onions. Cut however you like them. 3 tablespoons of burrito spice mix Couple of cloves of garlic. Notes: Pick the beans you prefer. Some suggestions: Kidney beans, pinto beans, black bean, or mixes. You could also use chickpeas or lentils If you don’t like beans at all you can halve the other ingredients, or double the meat, or bulk out with other veggies like capsicum and zucchini. There is garlic in the spice mix so the cloves are optional depending on how much you like garlic. If you’re not keen on spicy food, start with 2 tablespoons of spice mix and add more when tasting Method: 1. Cook onions and garlic until soft/golden. 2. Add mince to pot and cook until browned 3. Add spice mix, beans, and tomatoes 4. Simmer on low to medium until meat is cooked through and sauce reduces. (roughly half an hour) Storing: The meat sauce freezes and defrosts really well. Serving: Nachos: Spread meat sauce over corn chips. Spread salsa and cheese over the meat. Heat in the oven or microwave until the meat is hot through and cheese is melted. Add sour cream or guac once cooked. Burrito bowls: as above but with rice instead of corn chips
